How to make litti chokha in Bihari style

Hello friends welcome to bhojpurijio. Today we will make yummy Litti Chokha.

Litti Chokha is a special recipe of Bihar and Jharkhand. It is relished in whole of India.

Let’s start making Litti Chokha.

To make Litti chokha

Firstly knead dough for the Litti. Take 3 cup wheat flour in a mixing bowl, add 3 tbsp ghee to it, 3/4 tsp salt or to taste. Add 1/2 tsp carom seeds, crush and add it as it imparts nice flavor. Add 1/4 tsp baking soda. Baking soda makes the litti soft and crispy. Mix all the ingredients well. Add water in small portions and knead soft dough, same as that of the parathas. Dough is kneaded and ready, 2 tbsp less than 1.5 cup water is used. Cover and keep the dough aside to set for 20 minutes.

Till then let’s make the chokha, to make it take 1 eggplant(Big Brinjal/Baigan), it is very soft, lets cut and check it. It is good eggplant(Big Brinjal/Baigan), lets roast it. Grease the eggplant with some oil, this helps remove the skin of the eggplant(Big Brinjal/Baigan). Put the eggplant to roast, keep a net over the flame, put eggplant(Big Brinjal/Baigan) over it. Likewise also grease the tomatoes, and put over the net to roast. Flip them at regular intervals. Flip eggplant by holding the stalk, for tomatoes use a pincher, as the tomatoes are roasted, roast till the peel turns black, flip it accordingly. Keep the roasted tomatoes in a plate. Tomato eggplants are roasted. It took 20 minutes to roast these. Let these cool off.

Lets make stuffing of litti from sattu.

Take 1 cup sattu in a bowl. Roasted peas with skin removed, when grinded make sattu. Mix spices to the sattu, add 1/2 tsp salt, 1 tsp grated ginger, 1 tbsp pickle masala, 2 to 3 tbsp green coriander, 2 finely chopped green chilies, 1 tbsp mustard oil, juice from 1 lemon. Mix all the ingredients well. If you prefer eating onion and garlic, then add 1 onion finely chopped and 4 to 5 garlic cloves finely chopped to it and mix. Stuffing seems slightly dry, add some water to it. Mix it well again. Stuffing is ready, we have added 2 tbsp water to it. Make stuffing such so that it can be binded like this.

Peel the tomatoes and eggplants(Big Brinjal/Baigan) for chokha. With knife the peel comes off conveniently. We have boiled potatoes, peel them too. Crush the veggies first, lets add spices, add 1 tsp salt, 2 finely chopped green chilies, 1 inch piece ginger grated or 1 tsp ginger paste. Add 3 to 4 tbsp finely chopped green coriander. Add juice from 1 lemon. With the help of a masher, mix spices and mash the veggies. Add 1 tbsp mustard oil to it. All the ingredients are mashed well. Chokha is ready.

 Dough is set and ready, grease hands with some ghee and squash the dough. Break the dough into small lumps. You can keep the size of litti as desired. Press and make it round, give shape of peda. With thumb and fingers give it a bowl shape, put 1 to 2 tsp stuffing in it, slightly press it, lift the dough from the sides close the stuffing and make it round. Litti is ready, keep it in a plate, prepare all the littis likewise. Now let’s roast these. You can roast littis in many ways. In a heavy based wok, in an appam maker or a cooker, over the flame on a net or directlly by frying. Firstly i will roast them in a wok. Add 1 tsp ghee to the wok, grease it , let it heat. Do not over heat it, keep the wok medium hot. We have taken thick alluminium wok, you can also take iron wok. The vessel should be thick, as we need to roast the littis on very slow flame. Wok is hot enough, put the littis to roast in it. Cover it and cook for 3 to 4 minutes on low flame, then check it. Till this is roasted let’s make more littis, 3 minutes have passed, let’s check the litti. Slightly move it, you can see it roasting, move all the littis slightly. Cover the littis, roast for 2 to 3 minutes them move them. Roast them well until golden brown from all sides. Now let’s roast this litti in an appam maker. Take appam maker put it to heat on very low flame. It is hot, put some ghee in its moulds. Put the littis to roast in these moulds. Cover it and cook for 5 minutes on low flame. Then check it. Keep the roasted part above, unroasted side beneath. 5 minutes have passed, let’s check the litti. Littis is golden brown from beneath, lets flip it and roast until golden brown from all sides. Pour some ghee over it and cover again. Check agin after 4 to 5 minutes. Let’s check the litti, litti is golden brown and ready on all sides, turn off flame, take out the littis in a plate. It took 20 minutes to roast the litti, it is roasted on low flame. Let’s check the litti of the appam maker, these are not brown at some places, flip it slightly. Let’s check the litti of the appam maker. These littis are now golden brown on all sides, litti is roasted and ready, take them out. It took 15 minutes to roast litti in the appam maker. You can also roast the litti this way by placing the net over flame, and arrange like this to roast. Flip these at intervals. Littis on net are roasted and ready, it took 10 to 12 minutes to roast these. It took the least time to roast over the jali stand. Dip the littis in ghee and take out, it turns out to be delicious. If you prefer having less ghee then you can skip dipping it.

 We have made 20 littis wit this quantity of dough. Litti chokha is ready, it is really sumptuous, crispy on the outside, soft on inside. We have cooked the litti in 3 ways, firstly in a heavy based wok with some ghee, put litti in it, move and roast until golden brown. You can even shallow fry these, put a bit much ghee or oil in the wok and shallow fry these on low flame. Secondly we roasted it in an appam maker, thirdly over a jali stand, You can roast these anyways as desired. To serve these keep littis in a plate, keep some chokha in a bowl. If you preffer ghee, slightly break the littis, put some ghee over it.
